Tomato and Orange Soup

A thick, smooth and creamy recipe without any cream at all. It is easy to cook and tastes brilliant.

16 oz can of tomatoes
1 large orange
1 large onion, chopped finely
250 g red split lentils (soaked if you like or rinsed)
750 ml of vegetable stock
½ teaspoon of salt and pepper to taste
2 teaspoons of sugar
2 tablespoons of finely chopped coriander
2 tablespoons of tomato puree
2 tablespoons of olive oil 


1. Sauté the onion in the olive oil.

2. When the onion turns soft and clear, add the lentils.

3. Stir a few times then add the stock, salt, pepper, sugar and fresh coriander.

4. Bring to the boil then turn down the heat and simmer for 10 minutes.

5. Meanwhile grate the rind of the orange and collect the juice.

6. Chop the tomatoes in the can, and then add the contents to the pan.

7. Add the tomato puree and the juice and rind of the orange.

8. Stir well then leave to cook for a further 15 minutes.

9. Serve with Melba toast or thin slices of white bread toast.

This soup can be covered and refrigerated to serve later, and it freezes well.
