Lemon Hummus with warm pitta and vegetable dippers

Ingredients:
16 oz can or equivalent soaked and simmered dried chick peas
Retained cooking liquid – ¼ cup
Juice of one lemon
1 ½ tablespoons of tahini (a sesame seed paste that looks like mayonnaise) but peanut butter will do nicely
2 cloves of garlic, crushed
½ teaspoon of salt
2 tablespoons of olive oil 

Method:

1. Drain the chickpeas, setting aside some of the liquid.

2. Combine all the remaining ingredients apart from the olive oil in a blender or liquidiser.

3. Add ¼ cup of the liquid form the chickpeas.

4. Blend for 3 to 5 minutes on low until thoroughly mixed and smooth.

5. Spoon into a serving bowl and make a small well in the centre of the hummus.

6. Add olive oil into the well.

7. Garnish with fresh parsley or other leaves (coriander works well) if you have any.

8. Serve with warm, fresh pitta bread and vegetable fingers to dip.

This can be covered and refrigerated to serve later.
